As a complete newbie with zero sailing experience but a lofty goal, I found the same problem when looking around for lessons. I live in the freshwater sailing capital of the world, yet I couldn't find one class that didn't base their curriculum on the premise that I must be under 25 and wanted to race Bermudian rigs.
Just as well - Given my ADD and history of problems with authority, traditional teaching methods probably would have been a waste of money anyway. For now my plan is to just start logging real time on the water and letting experience be my teacher.

Apparently this issue of racer vs cruiser is not exactly a current issue. In his 1956 book "The Compleat Cruiser - The Art, Practice and Enjoyment of Boating" L Francis Herreshoff wrote the following:
"But cruising of late years has become hopeless confused with racing. Cruising is not sailing to Bermuda in competition or taking a beating off the Fastnet Rock, nor is it spending your time changing rule-cheating sails in rapid succession. ...."
This is 60 years old and apparently had been an issue in his mind for some time before that.
